Head Chef Marcus Wells in the Aria kitchen
The Kitchen

Chef Marcus Wells

"Lancashire’s larder is extraordinary. My job is simply to get out of the way and let the ingredients speak."

Marcus trained under two Michelin-starred chefs in London before returning north to open Aria in 2018. His cooking philosophy centres on provenance — sourcing from farms and fishermen he knows personally, within 60 miles of the kitchen.

Every dish on the menu tells a story about a place: the farm in the Ribble Valley, the fishing boat out of Fleetwood, the dairy at the foot of the Trough of Bowland.
