Marcus trained under two Michelin-starred chefs in London before returning north to open Aria in 2018. His cooking philosophy centres on provenance — sourcing from farms and fishermen he knows personally, within 60 miles of the kitchen.
Every dish on the menu tells a story about a place: the farm in the Ribble Valley, the fishing boat out of Fleetwood, the dairy at the foot of the Trough of Bowland.
